Ingredients:

• 1 lb (450 g) firm white fish fillets (cod, haddock, or tilapia), cut into bite-sized pieces
• 1 cup (125 g) all-purpose flour
• 2 large eggs, beaten
• 1 cup (100 g) breadcrumbs (plain or panko)
• ½ cup (50 g) grated Parmesan cheese (optional)
• 1 tsp garlic powder
• 1 tsp paprika
• ½ tsp salt
• ½ tsp black pepper
• Vegetable oil (for frying)

Instructions:

1. Prep the coating stations:

   • Place flour in a shallow dish.
   • In a second shallow dish, beat the eggs.
   • In a third dish, mix breadcrumbs, Parmesan cheese (if using), garlic powder, paprika, salt, and pepper.

2. Coat the fish pieces:

   • Dredge each fish piece in flour, shaking off the excess.
   • Dip the floured fish into the beaten eggs.
   • Coat the fish in the breadcrumb mixture, pressing lightly to adhere.

3. Fry the fish:

   • Heat about 1 inch (2.5 cm) of vegetable oil in a deep skillet or frying pan over medium-high heat (350°F/175°C).
   • Fry the fish nuggets in batches, turning occasionally, for about 3-4 minutes or until golden brown and cooked through.
   • Remove with a slotted spoon and drain on paper towels.

4. Serve:

   • Serve hot with your favorite dipping sauces, such as tartar sauce, ketchup, or a zesty lemon aioli.

Tips:

• For a healthier version, bake the nuggets at 400°F (200°C) on a greased baking sheet for 12-15 minutes, flipping halfway through.
• Add a squeeze of lemon or sprinkle fresh herbs for added flavor.
