Ingredients:
- 500 g (1 lb) boneless fish fillets (salmon, cod, tilapia, or any firm white fish)
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp lemon zest
- 2 tbsp fresh parsley or cilantro, chopped
- 1 tsp Dijon mustard
- ½ tsp paprika
- ½ tsp black pepper
- ½ tsp salt
- 1 egg, lightly beaten
- ½ cup breadcrumbs (panko or regular)
- 2 tbsp olive oil or vegetable oil (for frying)
Instructions:
Prepare the Fish:
- Finely chop the fish fillets by hand or pulse them in a food processor until coarsely ground (avoid overprocessing to maintain some texture).
Mix the Ingredients:
- In a large bowl, combine the chopped fish, onion, garlic, lemon zest, parsley or cilantro, Dijon mustard, paprika, black pepper, and salt. Mix well.
- Add the egg and breadcrumbs to bind the mixture. Stir until just combined.
Shape the Patties:
- Divide the mixture into 4 equal portions and shape them into burger patties (about ¾-inch thick). Place them on a plate and refrigerate for 15-20 minutes to firm up.
Cook the Patties:
- Heat the olive oil in a skillet over medium heat. Add the fish patties and cook for 3-4 minutes on each side, or until golden brown and fully cooked (internal temperature of 145°F/63°C).
Assemble the Burger:
- Toast burger buns and spread your favorite sauce (tartar sauce, mayo, or a zesty aioli) on the bottom bun.
- Place the cooked fish patty on the bun and add lettuce, tomato slices, pickles, and any other desired toppings.
- Cover with the top bun and serve immediately.
