Crispy Leg Fried Chicken

Ingredients:

For Chicken Marination:
  • 6 chicken drumsticks (legs)
  • 1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar/lemon juice)
  • 1 tbsp ginger-garlic paste
  • 1 tsp red chili powder (adjust to taste)
  • 1 tsp black pepper powder
  • 1 tsp paprika (optional, for color)
  • 1 tsp salt
For Coating:
  • 1 cup all-purpose flour
  • ½ cup cornflour (cornstarch)
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • Oil for deep frying

Instructions:

  1. Marinate the Chicken:

    • In a bowl, mix buttermilk, ginger-garlic paste, red chili powder, black pepper powder, paprika, and salt.
    • Add the chicken drumsticks to the mixture, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight, for the best flavor.
  2. Prepare the Coating:

    • In a separate bowl, combine all-purpose flour, cornflour, paprika, garlic powder, onion powder, oregano, salt, and black pepper. Mix well.
  3. Coat the Chicken:

    • Remove the marinated chicken from the fridge and shake off any excess liquid.
    • Dredge each drumstick in the flour mixture, ensuring it is evenly coated. For an extra crispy coating, dip the floured drumstick back into the buttermilk and then coat it again in the flour mixture. Repeat for all drumsticks.
  4. Fry the Chicken:

    • Heat oil in a deep frying pan or pot over medium heat. The oil should reach about 350°F (175°C).
    • Carefully lower the chicken drumsticks into the hot oil, frying in batches to avoid overcrowding.
    • Fry for 12-15 minutes, turning occasionally, until the chicken is golden brown and fully cooked (internal temperature of 165°F/74°C).
    • Remove and place on paper towels to drain excess oil.
  5. Serve:

    • Serve hot with your favorite dipping sauce, coleslaw, or mashed potatoes.

  • For an extra juicy result, let the chicken come to room temperature before frying.
  • Avoid high heat as it can burn the coating before the chicken cooks through.
