Chicken Cutlet

Ingredients:

For the Chicken Mixture:

  • Minced chicken: 250 g
  • Potatoes: 2 medium (boiled and mashed)
  • Onion: 1 medium (finely chopped)
  • Green chilies: 2 (finely chopped)
  • Ginger-garlic paste: 1 tsp
  • Coriander leaves: 2 tbsp (finely chopped)
  • Turmeric powder: 1/4 tsp
  • Red chili powder: 1/2 tsp
  • Garam masala: 1/2 tsp
  • Coriander powder: 1 tsp
  • Cumin powder: 1/2 tsp
  • Salt: To taste
  • Oil: 1 tbsp (for cooking)

For Coating and Frying:

  • Egg: 1 (beaten)
  • Breadcrumbs: 1 cup
  • Oil: For shallow or deep frying

Instructions:

1. Prepare the Chicken Mixture:

  1. Heat 1 tbsp oil in a pan over medium heat. Add chopped onions and sauté until golden brown.
  2. Add green chilies and ginger-garlic paste. Sauté until the raw aroma disappears.
  3. Add minced chicken and cook until it changes color and is fully cooked.
  4. Stir in turmeric powder, red chili powder, garam masala, coriander powder, cumin powder, and salt. Mix well.
  5. Cook until the mixture is dry. Remove from heat and let it cool.
  6. Combine the cooked chicken mixture with mashed potatoes and chopped coriander leaves. Mix well to form a dough-like consistency.

2. Shape the Cutlets:

  1. Divide the mixture into equal portions and shape them into oval or round cutlets.

3. Coat the Cutlets:

  1. Dip each cutlet in the beaten egg, ensuring it is coated evenly.
  2. Roll the cutlet in breadcrumbs to coat it completely.

4. Fry the Cutlets:

  1. Heat oil in a pan for shallow or deep frying.
  2. Fry the cutlets on medium heat until golden brown and crispy on both sides.
  3. Remove and drain on paper towels to absorb excess oil.

5. Serve:

  • Serve hot with ketchup, mint chutney, or mayonnaise.

Tips:

  • For extra crispiness, double-coat the cutlets by repeating the egg and breadcrumb steps.
  • You can add grated cheese to the chicken mixture for a cheesy variation.
  • To make it healthier, bake or air-fry the cutlets instead of frying.
