Chicken Seekh Kebab

Ingredients:

  • 500 g (1 lb) minced chicken (preferably with a bit of fat)
  • 1 medium onion, finely chopped or grated
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, minced
  • 2 green chilies, finely chopped (adjust to taste)
  • 2 tbsp fresh cilantro (coriander leaves), finely chopped
  • 2 tbsp fresh mint leaves, finely chopped (optional)
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • ½ tsp garam masala powder
  • ½ tsp red chili powder or paprika
  • ½ tsp turmeric powder
  • ½ tsp salt (or to taste)
  • 2 tbsp gram flour (besan) or breadcrumbs (to bind)
  • 1 tbsp lemon juice
  • 1 tbsp oil (for mixing)
  • Oil or melted butter (for grilling or frying)

Instructions:

  1. Prepare the Mixture:

    • In a large bowl, combine the minced chicken with onion, garlic, ginger, green chilies, cilantro, mint, and all the spices (cumin, coriander, garam masala, chili powder, turmeric, and salt).
    • Add the gram flour or breadcrumbs, lemon juice, and 1 tbsp oil. Mix well until all ingredients are evenly combined.
    • Cover the bowl and refrigerate the mixture for 30 minutes to 1 hour to allow the flavors to meld and the mixture to firm up.
  2. Shape the Kababs:

    • Wet your hands with water or a bit of oil to prevent sticking. Take a portion of the mixture and shape it around a skewer, forming a cylindrical kabab. Repeat with the remaining mixture.
    • If you don’t have skewers, shape the mixture into sausage-like kababs by hand.
  3. Cook the Kababs:

    • Grill: Preheat a grill to medium-high heat. Brush the kababs with oil or butter and grill for 8-10 minutes, turning occasionally, until cooked through and slightly charred.
    • Pan-Fry: Heat a bit of oil in a non-stick pan over medium heat. Cook the kababs for 4-5 minutes on each side until golden brown and fully cooked.
    • Oven: Preheat your oven to 400°F (200°C). Place the kababs on a greased baking sheet and bake for 15-20 minutes, turning halfway through. Broil for an additional 2-3 minutes for a charred effect.
  4. Serve:

    • Serve hot with mint chutney, yogurt dip, or a side of onion rings and lemon wedges. Pair with naan or paratha for a complete meal.
