Soya Cutlet

Ingredients:

  • Soya chunks/granules: 1 cup
  • Potatoes: 2 medium (boiled and mashed)
  • Onion: 1 medium (finely chopped)
  • Green chilies: 2-3 (finely chopped)
  • Ginger-garlic paste: 1 tsp
  • Coriander leaves: 2 tbsp (finely chopped)
  • Red chili powder: 1 tsp
  • Garam masala: 1 tsp
  • Turmeric powder: 1/2 tsp
  • Cumin powder: 1/2 tsp
  • Salt: To taste
  • Bread crumbs: 1/2 cup (for binding and coating)
  • Cornflour: 2 tbsp (mixed with water for slurry)
  • Oil: For shallow or deep frying

Instructions:

  1. Prepare Soya:

    • Boil water, add a pinch of salt, and soak soya chunks for 10-15 minutes.
    • Drain the water and squeeze out excess moisture. If using chunks, blend them into a coarse mixture or use granules directly.
  2. Mix Ingredients:

    • In a large bowl, mix the prepared soya, boiled and mashed potatoes, onion, green chilies, ginger-garlic paste, and coriander leaves.
    • Add red chili powder, garam masala, turmeric powder, cumin powder, and salt. Mix well.
    • Add bread crumbs gradually to bind the mixture into a dough-like consistency.
  3. Shape the Cutlets:

    • Take small portions of the mixture and shape them into round or oval cutlets.
  4. Coat the Cutlets:

    • Dip each cutlet in the cornflour slurry, then roll it in bread crumbs for a crispy coating.
  5. Fry the Cutlets:

    • Heat oil in a pan. Shallow fry or deep fry the cutlets on medium heat until golden brown on both sides.
  6. Serve:

    • Drain on paper towels to remove excess oil. Serve hot with ketchup, mint chutney, or tamarind chutney.

Tips:

  • For a healthier version, you can bake or air-fry the cutlets instead of frying.
  • You can add grated vegetables like carrots or peas for extra flavor and nutrition.
