Aloo Tikki

Ingredients:

For the Tikki:
  • 4 medium potatoes, boiled and mashed
  • 2 tbsp bread crumbs or crushed cornflakes (for binding)
  • 2 tbsp cornstarch or rice flour (optional, for crispiness)
  • 1 green chili, finely chopped (optional)
  • 1 tsp ginger, grated
  • 2 tbsp fresh coriander leaves, finely chopped
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • ½ tsp red chili powder or paprika
  • ½ tsp chaat masala (optional)
  • Salt to taste
For Frying:
  • Oil for shallow frying or deep frying

Instructions:

  1. Prepare the Mixture:

    • In a large bowl, combine the mashed potatoes, bread crumbs, cornstarch (if using), green chili, grated ginger, coriander leaves, and all the spices (cumin powder, coriander powder, garam masala, red chili powder, and chaat masala). Add salt to taste.
    • Mix thoroughly to form a smooth, pliable dough. Adjust the consistency with more bread crumbs if the mixture feels too sticky.
  2. Shape the Tikkis:

    • Divide the potato mixture into equal portions (about 8-10). Shape each portion into a round, flat patty (tikki), about ½ inch thick.
  3. Cook the Tikkis:

    • Shallow Frying:
      Heat oil in a skillet over medium heat. Once hot, place the tikkis in the pan and cook for 3-4 minutes on each side until golden brown and crispy. Fry in batches to avoid overcrowding.
    • Deep Frying:
      Heat oil in a deep pan or kadai. Fry the tikkis until golden and crispy. Drain on paper towels.
    • Air Frying:
      Preheat the air fryer to 375°F (190°C). Brush the tikkis with oil and air fry for 12-15 minutes, flipping halfway through.
  4. Serve:

    • Serve hot with mint chutney, tamarind chutney, or ketchup. You can also top with yogurt, chutneys, chopped onions, and sev for a chaat-style presentation.

  • Use starchy potatoes (like russet) for a better binding texture.
  • Ensure the potatoes are well-mashed and free of lumps for smooth tikkis.
  • Customize the spices and add grated paneer, peas, or cooked lentils for a variation.
