Ingredients:
For the Dough:
- Whole wheat flour (atta): 2 cups
- Salt: 1/2 tsp
- Water: As needed
- Oil or ghee: 1 tbsp
For the Potato Filling:
- Potatoes: 4 medium (boiled and mashed)
- Green chilies: 2 (finely chopped)
- Ginger: 1 tsp (grated)
- Coriander leaves: 2 tbsp (finely chopped)
- Red chili powder: 1/2 tsp
- Turmeric powder: 1/4 tsp
- Garam masala: 1/2 tsp
- Cumin seeds: 1/2 tsp (optional)
- Dry mango powder (amchur): 1/2 tsp (or lemon juice)
- Salt: To taste
For Cooking:
- Ghee or butter: For roasting
Instructions:
1. Prepare the Dough:
- In a bowl, mix whole wheat flour and salt.
- Gradually add water and knead into a soft, smooth dough.
- Add oil or ghee and knead again for 2-3 minutes.
- Cover with a damp cloth and let it rest for 20-30 minutes.
2. Prepare the Potato Filling:
- In a mixing bowl, add mashed potatoes.
- Mix in green chilies, ginger, coriander leaves, red chili powder, turmeric powder, garam masala, cumin seeds, dry mango powder, and salt.
- Combine well to make a smooth, lump-free filling.
3. Stuff and Roll the Parathas:
- Divide the dough into equal-sized balls and the potato filling into slightly smaller balls.
- Roll out a dough ball into a small disc.
- Place a potato filling ball in the center, gather the edges of the dough to seal the filling, and pinch to close.
- Flatten slightly and gently roll out into a round paratha (about 6-8 inches), ensuring the filling doesn’t spill out.
4. Cook the Parathas:
- Heat a tawa or skillet over medium heat.
- Place the rolled paratha on the hot tawa and cook until small bubbles appear.
- Flip and spread ghee or butter on the cooked side.
- Flip again and spread ghee on the other side. Press lightly with a spatula for even cooking.
- Cook until golden brown spots appear on both sides.
5. Serve:
- Serve hot with yogurt, pickles, or a dollop of butter on top.
Tips:
- To avoid the filling spilling out, ensure the potato mixture is dry and smooth.
- Roll gently to prevent tearing.
- You can add grated cheese, paneer, or chopped onions to the filling for variations.
